All about a salad!!

Hello friends, hope you all are well and hearty. Yesterday, at dinner, I prepared a colourful salad inspired by the salsa recipe. It turned out so good that I immediately decided to share it with you. So photos are duly captured before my family could start gorging on them. Believe me, the veritable feast of colour added a special zing to our daily food. If I say that the assortment of raw vegetables succeeded to arouse our tastebuds to attention towards the food in the dish, then I wouldn’t be wrong. Especially the children grew up though, used to stick with their mobile routine during dinner, despite my countless warning against it, now forced to sit back and take notice of the food served to them.

The menu was simple, the Indian style chilly chicken with gravy and toasted garlic bread(another favourite of my family). At first, I collected all the veggies available in my home, red, yellow, green bell peppers, corns, carrots, sweet potatoes, onions, tomatoes, peas, lettuce, chillies, lemon(scented variety, Bengalis call it Gondhoraj) and some coriander leaves.

After washing them thoroughly, diced them all into small cubes. There were some boiled potatoes and cottage cheese(paneer) in the fridge, so added them too, to add some more colour and taste. All the ingredients were assembled in a large bowl, Gondhoraj lemon juice and some olive oil were drizzled. Finally, salt and some freshly crushed black pepper were added.

With the help of two forks, everything was mixed for the tastes to spread evenly. Now it was garnishing time. I gently poured the entire mixture into a pristine white serving dish and spread some crushed cottage cheese over it and the set-up was complete. The alluring salad was ready to eat.

Friends, the best bargain for me was that all those fresh veggies were eaten without any complaint. My son is very much reluctant to have them, otherwise. It is so easy to prepare and taste so nice and crunchy that you would fall immediately in love with it. That’s why I thought maybe you can also make it, to add colour to your meals and enjoy them as much as we did.

    1. The best part is, it was unplanned. I just looked at all those ingredients lying unused in the fridge and just decided to assemble them. The result was a surprise for me too!
      I always have to look for innovative ways to make my son eat veggies. The salad was an instant hit.😊
